Ingredients

Pimento Cheese

  • 1/4 cup Mt Olive Roasted Red Peppers, diced and drained
  • 1/2 cup yellow sharp cheddar
  • 1/2 cup yellow extra sharp cheddar
  • 2 Tbsp mayo
  • 4 oz cream cheese
  • 1 Tbsp onion, freshly grated
  • 1/2 tsp Worcestershire
  • 1/4 tsp garlic powder
  • Dash of cayenne pepper

  • 60 flat tater tots
  • 1/2 lb 80/20 ground beef
  • Garlic powder
  • Salt
  • Pepper
  • Pimento Cheese
  • ~3 Mt Olive Hot & Spicy Kosher Dills, sliced into 1/4” thick discs
  • 30 bamboo cocktail picks

COOKING INSTRUCTIONS:
Pimento Cheese Burger Bites

Pimento Cheese

  1. Using a linen, squeeze peppers to drain after dicing.
  2. In a small bowl, combine all ingredients and stir until well-combined. Chill until ready for use.

 

Pimento Cheese Burger Bites

  1. Cook tater tots according to package instructions.
  2. Working one at time, form the ground beef into 1/2” thick and 1 1/2” long patties. Place patties on a parchment-lined baking sheet. Season one side of patties with garlic powder, salt, and pepper to taste.
  3. Preheat an electric griddle to medium-high heat. Working quickly, place half of the patties on skillet. Patties should cook for about 60 seconds on each side (or until desired doneness). Remove from griddle and set aside. Repeat with remaining patties. Remove from heat and set aside.
  4. To build each burger, start with one tot, top with burger, pimento cheese, pickle, then another tot. Repeat with all ingredients. Then skewer each burger. Serve immediately.
