Ingredients

Lemon Curd

  • 4 large egg yolks
  • 3 lemons, zested and juiced
  • 1 cup sugar
  • 1/8 tsp salt
  • 1 stick butter, fridge temp & sliced into Tbsps

 

Pistachio French Toast

  • 4 eggs
  • 2/3 cup milk
  • 1/4 cup pistachio cream
  • 1/3 cup flour
  • 1/4 cup sugar
  • 1/4 tsp salt
  • 12 1.5” thick slices of bread
  • Butter, for cooking
  • 1/4 cup honey
  • Crushed pistachios

COOKING INSTRUCTIONS:
Pistachio French Toast with Lemon Curd

Lemon Curd

  1. In a food processor, add lemon zest and sugar and pulse until fine and combined.
  2. Bring a small pot of water to boil.
  3. In a large bowl, add egg yolks, lemon zest and juice, sugar, and salt. Once pot is boiling reduce to heavy simmer, then place bowl on top of pot. Whisk continuously until curd thickens, about 10 minutes.
  4. Remove bowl from heat and whisk in butter 1 Tbsp at a time. Once all butter is integrated, transfer to a storable container to cool. Let cool completely

 

Pistachio French Toast

  1. In a microwave safe ramekin or bowl, heat pistachio cream on high for about 15 seconds.
  2. In a medium bowl, whisk together eggs, milk, pistachio cream, and almond extract. In a separate bowl, whisk together flour, sugar, and salt. Slowly whisk wet ingredients into dry ingredients. Whisk until well-combined.
  3. Heat a Tbsp of butter on medium heat on electric skillet or in pan.
  4. Working one slice of bread at a time, dredge bread completely in batter then lay flat on skillet. Cook until golden brown, then flip, about 1-2 minutes per side. Set aside. Cook multiple slices at at time as room on skillet allows.
  5. Spread out pistachios on a plate.
  6. In a microwave safe ramekin or bowl, heat honey on high for about 15-20 seconds. Using a small spatula, spread a thin layer of honey on the top side of every slice of bread. Dip honey side of each bread slice in pistachios. Arrange 2 bread slices pistachio side up on individual plates. Top with Lemon Curd. Enjoy.
