These Pistachio Snowball Cookies take traditional Russian Tea Cakes and swap out the walnuts for pistachio. The result—the shortbread cookies you love with a touch of earthiness, pineyness, and a hint of pepper. These are one of the easiest cookies to make, too!

Ingredients
- 1 cup unsalted butter
- 1/2 cup powdered sugar
- 1 tsp vanilla
- 2 1/4 cup AP flour
- 1 cup pistachio, finely chopped
- 1/4 tsp salt
- Powdered sugar, for coating
COOKING INSTRUCTIONS:
Pistachio Snowball Cookies
- Preheat oven to 400º. Mix together butter, 1/2 cup powdered sugar, and vanilla in a large bowl.
- Stir in flour, pistachio, and salt until the dough holds together when squeezed.
- Shape the dough into ping pong ball-sized balls. Place dough 1” apart on ungreased cookie sheets. Bake until set but not brown, about 10-12 mins.
- Remove from cookie sheet and cool on wire rack. Roll warm cookies in powdered sugar until well-coated. Serve immediately or store in airtight container.
