Ingredients
- 8 oz brie wheel
- 8 slices prosciutto (~1/2 lb prosciutto)
- 5-7 strawberries, thinly sliced
- Strawberry preserves, for garnish
- French baguette, sliced
- Olive oil, to taste
- Salt, to taste
- Cracked, to taste

COOKING INSTRUCTIONS:
Prosciutto Wrapped Brie
- Preheat grill to ~450ºF.
- Lay bread slices on parchment-lined baking sheet. Drizzle with olive oil, then season with salt and pepper.
- Grill bread for 60-90 seconds on one side, then flip and repeat. Remove from grill and set aside.
- Turn off one burner. Let grill temp lower to 300-350ºF (lift lid intermittently to cool, if needed).
- On a parchment-lined baking sheet, arrange prosciutto slices like spokes on a wheel. The prosciutto should overlap more towards the center of the wheel. Place brie at center of prosciutto wheel. One by one, fold each prosciutto slice up and over top of brie until it’s completely covered. Lightly press the folded prosciutto down on all sides.
- Place brie over burner that’s turned off. Cook for ~20 mins, or until fat begins to render and prosciutto softens. Flip brie and cook for another 15-20 mins. Flip brie again and move to burner that’s on and cook for ~1 min to crisp up prosciutto. Flip and cook for another ~1 min. Remove and prepare to serve immediately.
- Arrange strawberries in a scalloped circle around the edge of the top of the brie wheel. Then arrange an inner scalloped circle of strawberries. Top with strawberry preserves. Cut Prosciutto Wrapped Brie and serve immediately with crostini.
