Smoked Grape Tomatoes

  • 1.5 lbs grape tomatoes
  • Olive oil
  • Red wine vinegar
  • Salt
  • Pepper

Red White & Bleu Beef Bites

Smoked Grape Tomatoes

  1. Preheat smoker to 200°F.
  2. In a medium bowl, lightly toss tomatoes in oil and vinegar, then salt and pepper to taste.
  3. Place tomatoes on a long sheet of aluminum foil. Fold the foil around the tomatoes so that it creates a loose pocket with a small opening at the top.
  4. Smoke for 25-30 minutes, or until tomatoes have slightly cooked without wrinkling too much and have taken on a hint of smoke.
  5. Remove from smoker and set aside.


Beef Tip Skewers

  1. Preheat grill to high heat.
  2. Skewer beef tips. Season with steak seasoning to taste.
  3. Grill beef tips for 1-2 minutes on each sides.
  4. Remove from heat and let rest at least 5 minutes. Remove beef from skewers. Set aside.


Red, White & Bleu Beef Bites

  1. On a cocktail sword or small skewer, place 1 tomato, 1 beef tip, then 1 tomato. Set aside. Repeat until all tomatoes and beef are skewered.
  2. On a serving plate, make a schmear of bleu cheese dressing. Arrange the skewers in a straight line on the dressing.
  3. Drizzle skewers with balsamic glaze. Top with gorgonzola. Serve immediately.
