Rice Paper Breakfast Sandwich Recipe
This Rice Paper Breakfast Sandwich is a low-carb, gluten-free, high-protein bite for anybody who thinks their diet makes them an interesting person. For the rest of us, it’ll just have to be an endorphin bomb on a Sunday morning while the world spins further into a dizzying riddle. Raise your saturated fats in the air, friends. Ingredients
- 1 extra large Russet potato, diced into ¼” cubes
- 1 Tbsp olive oil
- 3 Tbsp butter, divided
- Garlic powder, to taste
- Smoked paprika, to taste
- Salt, to taste
- Pepper, to taste
- 1 lb spicy breakfast sausage
- 13 eggs, divided & beaten
- 1 lb sharp white cheddar, freshly shredded
- (12) 22 cm rice paper wrappers
COOKING INSTRUCTIONS:
Rice Paper Breakfast Sandwich
- Add 1 Tbsp olive oil and 1 Tbsp butter to a cast iron pan over medium heat. Add potatoes and season that side to taste with garlic powder, smoked paprika, salt, and pepper. Cook for 10 mins completely undisturbed, then flip and season to taste again. Melt 1 more Tbsp butter over potatoes. Cook for another ~5 mins, then stir. Continue stirring every 3-4 mins until potatoes are desired doneness, about 20-25 mins. Remove from pan and set aside.
- In another large pan over medium heat, cook sausage until browned completely. Remove from pan while reserving rendered fat in pan. Melt last Tbsp of butter in pan. Add 8 beaten eggs to pan and cook while gently scrambling them. Remove from heat and set aside.
- To build 1 Rice Paper Breakfast Sandwich: Grease a large cutting board with cooking spray. Place 5 beaten eggs in a shallow pasta bowl as your egg wash. Working 1 rice paper at a time and using 3 rice papers total, dredge the 1st rice paper completely in egg wash, then lay it on the cutting board. Dredge the 2nd rice paper in egg wash then lay it so that it overlaps with the 1st rice paper by about 3” (like a Venn diagram). Dredge the 3rd rice paper in egg wash then lay it so that it overlaps with the 2nd rice paper by about 3”. The 3 rice papers should be laid out left to right in a straight line. Toward the bottom of the rice papers, lay a layer of cheese the length of the rice papers, then a layer of potatoes, a layer of scrambled egg, a layer of sausage, then another layer of cheese. Carefully pull the end of the rice paper closest to you up and around the toppings and begin to tightly roll the rice paper away from you until you’ve created one long tube about 2” in diameter. Take one end of the tube and coil it inward to form a tightly wound spiral. Tuck the outer end of the tube underneath the spiral a bit to hold it in place. Repeat with remaining ingredients.
- Preheat air fryer to 400ºF. Cook for 20 mins, flipping halfway through. Be sure not to overcrowd the air fryer basket. Repeat with remaining sandwiches. Enjoy!
