Ingredients
Jalapeño Cheddar Sauce
- 1 Tbsp butter
- 1/2 onion, finely diced
- 4 cloves garlic, minced
- 2-3 jalapeños, finely diced
- 1 Tbsp flour
- Salt
- Pepper
- 1 cup milk
- 1/2 cup heavy cream
- 1/2 cup white cheddar, shredded
- 1/2 cup taco blend cheese, shredded
Potatoes
- 2 large Russet potatoes, sliced 1/8” thick
- Olive oil, to taste
- 1/2 head garlic
- 1/2 cup fresh herbs (parsley, oregano, chives)
- Salt
- Pepper
COOKING INSTRUCTIONS:
Roasted Potatoes with Jalapeño Cheese Sauce
Jalapeño Cheddar Sauce
- In a pan over medium-high heat, melt butter. Add onion and jalapeño and cook until softened. Add garlic and cook until fragrant. Whisk in flour until well-combined and cook for 1-2 minutes.
- Working slowly, whisk in milk and heavy cream. Bring to a simmer and allow to thicken. Whisk in cheese and remove from heat. Continue whisking until desired consistency. Serve immediately over sliced potatoes and cubed ham (optional).
Potatoes
- Preheat oven to 400º.
- In large bowl, toss potatoes, oil, garlic, herbs, and salt and pepper to taste.
- Line a baking sheet with foil. Spread out potato slices in a single layer. Roast for 15-20 minutes, or until they begin to turn golden brown and crisp slightly. Remove from oven.
