Sausage and Egg Hashbrown Sandwich Recipe

Quit it with the side-eyeing already. This Sausage and Egg Hashbrown Sandwich still wears a D.A.R.E t-shirt to bed every night. This sandwich is so straight edge that, when it was a kid, it threw its mom’s cigarettes in the trash like once a week. Calories, you say? Food can be an addiction, too? Well, as the McDonald’s GM at Zach’s first job once said — “You gonna die of something. Might as well be good eating.”

Ingredients

  • 4 frozen hashbrowns
  • 2 frozen breakfast sausage patties
  • 6 eggs, divided
  • Salt, to taste,
  • Pepper, to taste
  • 2 Tbsp butter, divided
  • 2 Tbsp freshly minced onion, divided
  • 2 Tbsp freshly minced green bell pepper, divided
  • 4 sharp cheddar slices

COOKING INSTRUCTIONS:
Sausage and Egg Hashbrown Sandwich

  1. Cook hashbrowns and sausage patties according to package instructions.
  2. While hashbrowns and sausages are cooking, scramble eggs so that 3 eggs each have their own bowl. Salt and pepper to taste. Set aside.
  3. In a pan over medium heat, melt 1 Tbsp butter. Add 1 Tbsp each onion and bell pepper. Salt and pepper to taste. Cook for about 1-2 minutes. Remove from pan and set aside. Add 3 eggs’ worth of scrambled eggs. Evenly spread half of cooked onion and pepper over egg. Tilt pan so that liquid egg spreads evenly over and forms one thin sheet. As egg begins to solidify, continue tilting pan and gently using a spatula to move uncooked egg to the edges of the pan so that it will cook. Once egg is cooked, cut it in half, then fold each half over twice. Top each half with 1 cheddar slice and cover pan for 30 seconds to melt. Remove from pan and set aside. Repeat with remaining scrambled eggs, other half of cooked onion and pepper, and cheddar.
  4. To build sandwich, slather one side each of 2 hashbrowns with ketchup. Set one hashbrown ketchup side-up. Top with 1 sausage patty and 2 folded eggs. Top with other hashbrown ketchup-side down. Repeat with remaining ingredients. Enjoy!

Wow! This is definitely a breakfast worth making. I am obsessed with the crunch this sandwich has! I definitely recommend making this the next time you want a quick and tasty breakfast!!
