Whenever company is over, it busts out the photos of you dressed up as what looks like a chubby vampire with jelly donut all over his face. It still remembers the first time you cussed in front it. It was waiting for you when you never showed up for dinner. It knows which sock you stashed the weed in. It texts you but you forget to reply, then tell yourself to remember, then forget again. You are as old now as it was in 1996. And that’s because it’s still sitting in separate tupperware containers in the back of your fridge, doofus. It’s waiting for your to make it.

Ingredients

Sloppy Joe

  • 1/2 cup ketchup
  • 1 Tbsp Dijon mustard
  • 1/2 Tbsp Worcestershire sauce
  • 1 Tbsp brown sugar
  • 1 cup beef stock
  • 1 Tbsp olive oil
  • 1 onion, diced
  • 1 green bell pepper diced
  • 3 cloves garlic, minced
  • 1 lb ground beef
  • 1 tsp smoked paprika
  • 1/4 teaspoon cayenne pepper
  • 1 Tbsp tomato paste
  • Salt, to taste
  • Pepper, to taste

 

Mac and Cheese

  • 2 Tbsp cornstarch
  • 1/2 tsp dry mustard
  • 2 tsp salt
  • 2 tsp pepper
  • 2.5 cups whole milk
  • 2 Tbsp butter
  • 1.5 cups smoked gouda, freshly shredded
  • 1.5 cups yellow sharp cheddar, freshly shredded
  • 1 Tbsp Dijon mustard
  • ~2 cups cavatappi pasta, al dente

  • Sourdough bread, sliced & toasted (we used jalapeño & cheddar sourdough)

COOKING INSTRUCTIONS:
Sloppy Joe Mac and Cheese Sandwich

Sloppy Joe

  1. In a bowl, whisk together ketchup, Dijon, Worcestershire, brown sugar, and beef stock. Set aside.
  2. Add oil to a large pan over medium-high heat. Sauté onion and bell pepper until tender. Add garlic and sauté until fragrant, about 1-2 minutes. Add ground beef and brown until cooked through, breaking it up with a spatula as it cooks.
  3. Stir in smoked paprika, cayenne, tomato paste, and salt, and pepper. Cook for about 1 minute. Stir in ketchup mixture and bring to heavy simmer. Continue simmering for 10-15 minutes, or until desired consistency. Lower heat and stir occasionally until ready to serve.

 

Mac and Cheese

  1. In a sauce pan, combine cornstarch, dry mustard, salt, and pepper.
  2. Turn burner to medium heat, then add milk and mustard to pan and whisk until well-combined. Continue whisking until sauce begins to lightly bubble and thicken. Whisking continuously, add butter until well-combined, then add cheese slowly while still whisking.
  3. Once cheese is fully melted, stir in pasta until well-integrated. Lower heat and stir occasionally until ready to serve.

 

Sloppy Joe Mac and Cheese Sandwich

  1. To build sandwich, lay 1 slice sourdough on cutting board. Top with a generous amount of Sloppy Joe, a generous amount of Mac N Cheese, jalapeños to taste, then another slice of bread. Cut in half to serve. Repeat with remaining ingredients. Enjoy!
