Southern-Style Pickle Pizza Recipe

This Southern-Style Pickle Pizza shakes a glass of bourbon in your face and shouts, “The South will rise again . . . as pizza dough!” AND it’s made by a bunch of Damn Yankee transplants in the Carolinas, where the pizza is generally terrible (don’t get us started on sugar in the red sauce). We do declare, this pie is quite the affront. Speaking of pies, one time when Zach was still serving tables at Olive Garden, an old Southern white lady asked another server for a slice of pecan pie. And the server said, “I’m sorry. We don’t have any pecan pie.” And the lady said, “It’s pih-KAHN pie. You urinate in a PEE-can.”

Ingredients

  • 2 balls pizza dough (1 ball makes a 12” pie)
  • 1/2 cup olive oil
  • 1/2 head garlic
  • Low-moisture mozzarella
  • Spicy whole dill pickles, thinly sliced
  • Corn
  • Frozen popcorn chicken, cooked
  • Pimento cheese

COOKING INSTRUCTIONS:
Southern-Style Pickle Pizza

Ceramic Grill Instructions

  1. Preheat grill with pizza stone to 600º.
  2. Air fry chicken tenders according to package instructions. Cut into small slices. Set aside.
  3. In a small pan over medium-high heat, sauté garlic in oil until just before it begins to get golden. Remove from heat.
  4. Roll out dough and top with half of sautéed garlic and oil mixture. Salt and pepper dough. Top with mozzarella, pickles, corn, chicken, and dollops of pimento cheese.
  5. Place already topped pizza onto pizza stone and cook for 1.5 – 2 minute increments, rotating pizza 90º each time. Pizza should take about about 5-6 minutes until done with top of crust just beginning to get golden brown. Remove from grill and slice and serve immediately.
  6. Repeat with other ball of pizza dough. Serve immediately.

Conventional Oven Instructions

  1. Preheat oven to 400ºF. Roll out dough and par-bake on baking sheet for 8 minutes. Remove from oven.
  2. Air fry chicken tenders according to package instructions. Cut into small slices. Set aside.
  3. In a small pan over medium-high heat, sauté garlic until just before it begins to get golden. Remove from heat.
  4. Top dough with half of sautéed garlic and oil mixture. Salt and pepper dough. Top with mozzarella, pickles, corn, chicken, and dollops of pimento cheese. Return to oven and bake for 20-25 minutes, or until cheese is just beginning to get golden brown and crust is set. Remove from oven and let cool for a minute or two. Slice and serve.
  5. Repeat with other ball of pizza dough. Serve immediately.
