Ingredients
Chicken Prep
- 2 chicken breasts, cubed
- 2 Tbsp olive oil
- Half a head of garlic, minced
- Zest of 1 lemon
- 1 Tbsp lemon juice
- 1 tsp salt
- 1 tsp black pepper
- 1 tsp dried oregano
- 1 tsp ground cumin
- 1/2 tsp coriander
- 1/2 tsp paprika
Spicy Garlic Sauce
- 1/2 cup mayonnaise
- 1 cup plain Greek yogurt
- 3 cloves garlic, minced
- 2 to 3 Tbsp Sriracha (or to taste)
- 1 tsp salt
- 1/2 tsp black pepper
- Pinch of cayenne pepper
- 1/2 Tbsp lemon juice
Pita Prep
- 1/4 cup olive oil
- Garlic powder, to taste
- Black pepper, to taste
- Sea salt flakes, to taste
Pita Build
- 4 Greek-style pitas or Naan
- Arugula
- 1 tomato, thinly sliced
- 1 cucumber, thinly sliced
- Chicken

COOKING INSTRUCTIONS:
Spicy Lemon Garlic Chicken Pitas
- In a medium-sized bowl, toss chicken with olive oil, then add garlic, lemon zest, lemon juice, salt, pepper, oregano, cumin, coriander, and paprika.
- Skewer the chicken and marinate it for at least 20 minutes.
- Prep garlic sauce by combining all the ingredients in a small bowl, then whisking together until smooth. Set aside.
- Preheat grill to high heat. Prep the pitas by combining olive oil, garlic powder, and black pepper to taste in a small bowl. Brush the mixture on both sides of pita. Sprinkle sea salt to taste on top side of pita only.
- Cook chicken skewers for about 6-8 minutes, turning every 2 minutes or until they get slightly charred on all sides (and are fully cooked). Remove from grill. Let rest. Turn grill heat to medium heat.
- Grill the pitas so that each side has grill marks but the pita remains easily bendable. About 2 minutes per side, depending on grill heat level.
- To build the pita, lay pita flat on plate, then spoon some sauce down the middle. Add arugula, then tomatoes, then cucumbers, then 8 or so pieces of chicken. Top with more sauce.
