Steak and Gorgonzola Pizza Recipe

This Steak and Gorgonzola Pizza started off as a salad and ended up as your new favorite slice of GOTDANG. If you really want the salad instead, you can just get rid of the pizza dough, mozzarella, and parmesan. Then quintuple the arugula. But why would you do that to yourself? At any moment, the supervolcano beneath Yellowstone could erupt and blast us out of existence. Wouldn’t you want your last night on Earth to be blessed with some steak and funk on a pizza pie?

Ingredients

Skirt Steak

  • 1 skirt steak
  • Chef Steve Boeger’s Spicewalla Everything Spice Rub
  • Coarse salt
  • Pepper

 

Steak Gorgonzola Corn Pizza

  • 1 ball pizza dough (makes two ~14″ pizzas)
  • 1/2 cup olive oil
  • 1 head garlic, minced
  • Low-moisture mozzarella cheese, freshly shredded
  • 1 cup arugula
  • 1 skirt steak, grilled and thinly sliced
  • 20 grape tomatoes, halved
  • 1 cup fresh sweet corn
  • Parmesan cheese, freshly shredded
  • Gorgonzola cheese, freshly crumbled
  • Salt
  • Pepper
  • Balsamic glaze

COOKING INSTRUCTIONS:

Skirt Steak

  1. Preheat grill to high.
  2. Season steak literally with rub, salt, and pepper.
  3. Grill on both sides until desired doneness. We prefer medium rare to medium.

 

Steak Gorgonzola Corn Pizza – Ceramic Grill Instructions

  1. Preheat grill with pizza stone to 700º.
  2. In a small pan over medium-high heat, sauté garlic until just before it begins to get golden. Remove from heat.
  3. Roll out dough and top with sautéed garlic and oil mixture. Top with mozzarella, arugula, steak, tomatoes, corn, parmesan, and gorgonzola. Salt and pepper to taste.
  4. Place already topped pizza onto pizza stone and cook for 60-second increments, rotating pizza each time. Pizza should take about 2 – 2 1/2 minutes until done with cheese just beginning to get golden brown and crust set. Remove from grill and drizzle with balsamic glaze. Serve immediately.
  5. Repeat with other ball of pizza dough. Serve immediately.

 

Steak Gorgonzola Corn Pizza – Conventional Oven Instructions

  1. Preheat oven to 400ºF. Roll out dough and par-bake on baking sheet for 8 minutes. Remove from oven.
  2. In a small pan over medium-high heat, sauté garlic until just before it begins to get golden. Remove from heat.
  3. Top with mozzarella, arugula, steak, tomatoes, corn, parmesan, and gorgonzola. Salt and pepper to taste.
  4. Return to oven and bake for 20-25 minutes, or until cheese is just beginning to get golden brown and crust is set. Remove from oven and let cool for a minute or two. Slice and serve.
  5. Repeat with other ball of pizza dough.
