Strawberry Stuffed French Toast Recipe

This Strawberry Stuffed French Toast will make a morning person out of you yet. Or at least a weekend brunch person. You can wake up by 11AM, can’t you? No matter what unforgivable mischief you were up to last night, this will set your blood sugar right and send you on your way (to probably take a nap).

Ingredients
- 8 oz cream cheese
- 1/3 cup powdered sugar + more for garnish
- 16 oz strawberries, divided (1 cup diced + more for garnish)
- 1/2 lemon, zested
- 4 slices brioche bread
- 1 cup milk
- 5 eggs
- 1 Tbsp cinnamon
- 1 Tbsp granulated sugar
- 1 Tbsp vanilla
- 2 Tbsp butter
- Strawberry preserves, for topping
COOKING INSTRUCTIONS:
Strawberry Stuffed French Toast
- In a medium bowl, whip cream cheese and powdered sugar until fluffy, about 1-2 minutes. Fold in 1 cup diced strawberries and lemon zest. Set aside.
- Lay out 4 slices of brioche. Spread cream cheese mixture evenly between 2 brioche slices. Top each cream-cheese’d slice with another slice of brioche to form a sandwich. Set aside.
- In a separate medium bowl, whisk together milk, eggs, cinnamon, granulated sugar, and vanilla until well-combined. (If doubling the recipe, don’t double the dredging liquid. It’s enough for 4 sandwiches).
- Preheat Char-Broil Scissor Cart Gas Griddle to medium-high heat.
- Melt 2 Tbsp butter on Griddle. Working 1 sandwich at a time, dredge sandwich completely in milk and egg mixture on both sides. Brown sandwich for about 2 minutes per side, or until golden brown. Repeat with other sandwich. Repeat with remaining sandwiches.
- To serve Stuffed French Toast, top each sandwich with a dusting of powdered sugar, sliced strawberries, and a drizzle of strawberry preserves. Enjoy!
