Swedish Meatball Sandwich Recipe

This Swedish Meatball Sandwich magically became a part of Zach’s grand plan to convert Sarah into liking baking spices with her savory dishes. A long time ago, he used to try to sneak cinnamon into the appropriate chicken dishes, just a little at a time, slowly poisoning Sarah with the joy of a new outlook on food. But every time, no matter how little the cinnamon, she’d notice it and refuse to eat. Flash forward to now—the nutmeg, allspice, and cardamom in this Swedish Meatball recipe had Sarah ready to hate it. But the creamy sauce, smoked gouda, and her genius idea of adding roasted grapes brought it all home for her. And it gives Zach hope that maybe someday before he dies he can take her to an Indian restaurant.

Ingredients

Roasted Grapes

  • 1 large bunch of grapes
  • 1 Tbsp olive oil

 

Swedish Meatballs

  • 1 onion, diced
  • 1 head garlic, minced
  • 1 lb ground beef
  • 1 lb ground pork
  • 1/2 tsp allspice
  • 1/2 tsp nutmeg
  • 1/4 tsp cardamom
  • 2/3 cup breadcrumbs
  • 1/2 cup milk
  • 2 eggs, beaten
  • 2 tsp salt
  • 1 tsp black pepper
  • 2 Tbsp butter

 

Swedish Meatball Sauce

  • 5 Tbsp butter
  • 5 Tbsp flour
  • 2 cups beef broth
  • 2 Tbsp jalapeño pepper jelly
  • 1 Tbsp Dijon mustard
  • 1 cup heavy cream
  • Salt
  • Pepper

  • Swedish meatballs
  • Roasted grapes
  • Smoked gouda cheese, cut into shards

Roasted Grapes

  1. Preheat oven to 425º.
  2. Toss grapes in olive oil then arrange in single layer on baking sheet. Bake for 15-20 minutes or until grapes start to burst.

 

Swedish Meatballs

  1. Add oil to a small pan over medium-high heat and sauté onion until tender. Add garlic and cook until fragrant. Remove from heat and set aside.
  2. In a large bowl, combine all ingredients (including onion and garlic) except butter. Be sure not to overwork the ground meat, as you’ll end up with a tougher meatball (not tender and juicy).
  3. Form meatballs with 1 1/2” diameter.
  4. In a large pan over medium heat, melt butter. Working in batches without overcrowding the pan, brown meatballs on all sides. About 5 minutes. Remove from pan and set aside.

 

Swedish Meatball Sauce

  1. In a large pan over medium heat, melt butter. Once butter is bubbling, slowly whisk in flour and cook for ~1 minute.
  2. Whisk in beef broth a little at a time until well-combined.
  3. Whisk in pepper jelly and mustard until well-combined. Slowly whisk in cream and bring to simmer while whisking frequently.
  4. Add in meatballs and, occasionally stirring, continue to simmer until sauce reaches desired thickness.

 

Swedish Meatball Sandwich Build

  1. Place 3-4 meatballs in hoagie bun. Spoon more sauce over top. Add roasted grapes and gouda cheese. Serve immediately.
