Toasted Tuscan Sausage Sandwich Recipe
This Toasted Tuscan Sausage Sandwich offers up an easier way to turn your favorite Italian sausage into a sandwich—spread it over a few slices of Italian loaf, then top it with a Caprese variation that substitutes roasted red peppers for tomato.

Ingredients
- 3 red bell peppers
- (1) ~12” Italian bread loaf
- 1 lb ground hot Italian sausage
- Olive oil
- ~8 oz sliced fresh mozzarella, torn into chunks
- Basil pesto, for topping
- Freshly shredded parmesan, for topping

COOKING INSTRUCTIONS:
Toasted Tuscan Sausage Sandwich
- Preheat oven broiler on high.
- Place bell peppers on greased, foil-lined baking sheet then broil for ~6 mins each side, or until most of pepper is blackened and soft. Remove from oven and place in covered bowl for 30 mins. Then peel, destem, and deseed the peppers, retaining only the peeled peppers and discarding the rest. Slice peppers into strips. Set aside.
- Preheat griddle to medium heat.
- Slice bread loaf in half to form two sandwich halves. Slice each sandwich half in half height-wise so that you now have 4 equal bread slices. Lay each bread slice cut side-up. Using your hands, press 1/4 lb of sausage evenly on top of each bread slice.
- Working one bread slice at a time, griddle the bread slice sausage side-down for 4-5 mins, or until sausage is fully cooked through. Once sausage is cooked through, evenly brush olive oil over top of bread crust. Flip bread slices, then top the sausage with some mozzarella, pesto, roasted red pepper strips, then parmesan. Pour a little bit of water around the bread slice then place a dome over it to steam it. Steam for 2-3 mins, or until both cheeses have melted. Remove from griddle and serve immediately. Enjoy!
