Twice Baked Potatoes Recipe

Ingredients

  • 4 russet potatoes
  • Olive oil, for brushing
  • 4 Tbsp butter
  • 1/2 cup sour cream
  • 1/2 cup (liquid measure) Heinz Herbes de Provence Gravy
  • 1/2 cup shredded cheddar + more for garnish
  • Salt, to taste
  • Pepper, to taste

  • Bacon crumbles, for garnish
  • Freshly sliced chives, for garnish

COOKING INSTRUCTIONS:
Twice Baked Potatoes

  1. Preheat oven to 400ºF.
  2. Using a fork, poke holes all over the surface of each potato. On a foil-lined baking sheet, brush potatoes with oil then salt them. Bake for 1 hour. Remove and let cool until able to be handled. (Leave oven at 400ºF after removing potatoes).
  3. In a large bowl, add butter, sour cream, gravy, and cheese. Slice each potato in half, then scoop out pulp from each half, being sure to leave about 1/3″ layer of pulp still in potato skin. Transfer pulp to previously mentioned bowl. Using an electric hand mixer, mix until well-integrated and smooth.
  4. Transfer potato mixture to a piping bag. Evenly distribute mixture between 8 potato skins. If you don’t have a piping bag, use a spoon.
  5. Top each potato shell with some more cheese, then bake on foil-lined baking sheet for 15-20 mins, or until top is golden brown, cheese is melted, and potatoes are heated through. Remove from oven and serve topped with cheddar, bacon crumbles, and fresh chives. Enjoy!
