Tzatziki Salmon Recipe

This Tzatziki Salmon is our way of saying weeknight meal without saying weeknight meal. Because weeknight meal sounds like a sad little crockpot offering to the insatiable workday gods. You can get excited for this meal any day of the week. You don’t have to negotiate with the assistant’s assistant to the Chancellor of HR to get extra PTO to prepare Tzatziki Salmon. You don’t have to activate an Out-of-Office auto-reply for that micromanaging client three time zones behind you. Just make it because you want to make it.

Ingredients

Tzatziki Sauce

  • 1/2 large cucumber, diced
  • 1/2 tsp cumin
  • 1/2 tsp kosher salt
  • 1 cup plain Greek yogurt
  • 1 Tbsp lemon juice
  • 1 cloves garlic, minced
  • 1/2 Tbsp fresh dill, minced

 

Tzatziki Salmon

  • 2 lbs skin-on salmon fillets
  • Garlic powder
  • Dried oregano
  • Salt
  • Pepper
  • 6 Roma tomatoes, diced
  • 1 English cucumber, diced
  • 4.5 oz Kalamata olives, pitted & quartered
  • 5 oz block feta, freshly crumbled
  • 1 Tbsp fresh oregano, finely chopped
  • 1 bottle Greek vinaigrette dressing
  • Air Fryer Salmon
  • Tzatziki Sauce

COOKING INSTRUCTIONS:
Tzatziki Salmon

Tzatziki Sauce

  1. In a medium-sized bowl, combine all ingredients and mix until well-integrated. Chill in refrigerator until ready for use.

 

Tzatziki Salmon

  1. In a food storage bag or container, season salmon with garlic powder, oregano, salt, and pepper to taste. Add 1/2 bottle of dressing and make sure salmon is mostly covered by dressing. Marinate for at least 1 hour.
  2. Preheat air fryer to 400ºF.
  3. Line air fryer basket with parchment paper. Spread out salmon fillets evenly. Air fry for 12-15 minutes, or until cooked through. Remove from air fryer and set aside.
  4. In a medium bowl, toss tomatoes, cucumber, olives, feta, and oregano in remaining 1/2 bottle of dressing until well-combined. Set aside.
  5. To plate, top 1 salmon fillet with Tzatziki to taste. Spill a serving of dressed veggies over salmon. Enjoy!
