Ingredients

Whipped Feta with Honey Roasted Roots

  • 1 cup pecan halves
  • 2 Tbsp melted butter, divided
  • 2 Tbsp brown sugar
  • Salt
  • 3 medium beets
  • 2 large carrots
  • 1 Tbsp olive oil
  • Pepper
  • 1 Tbsp hot honey + more for garnish
  • 1/4 cup + 2 Tbsp chopped fresh herbs, divided (thyme, oregano, basil, rosemary)
  • 7 oz block of feta cheese
  • 3 oz cream cheese
  • 2 Tbsp sour cream (add more if needed)

 

Crostini

  • 1 baguette
  • Olive oil
  • Cracked salt
  • Cracked pepper

COOKING INSTRUCTIONS:
Whipped Feta with Honey Roasted Roots

Whipped Feta with Honey Roasted Roots

  1. Preheat oven to 350ºF.
  2. Toss pecans in 1 Tbsp melted butter, brown sugar, and salt to taste. Arrange in a single layer on parchment-lined sheet pan. Toast in oven until lightly browned and fragrant, about 5-6 minutes. Remove from oven and let cool until able to be handled. Rough chop and set aside.
  3. Increase oven temp to 450°.
  4. Wash and peel veggies. Chop them into uniform 1/4” inch pieces.
  5. In a medium bowl, toss veggies with olive oil and salt and pepper to taste.
  6. Spread veggies onto a foil-lined sheet pan and roast at 450° for 18-20 minutes, or until tender.
  7. Whisk together other 1 Tbsp butter in with 1 Tbsp hot honey.
  8. Remove veggies from oven. Sprinkle 1/4 cup fresh herbs and drizzle honey-butter mixture over them. Return to oven for 5-8 minutes or until honey has slightly caramelized. Remove from oven and set aside.
  9. Combine feta, cream cheese, sour cream, and 2 Tbsp fresh herbs. Use a hand mixer to mix until smooth. Set aside.
  10. To serve, spread whipped feta evenly onto a plate. Drizzle with more hot honey. Top with veggies, then pecans. Serve with crostini. Enjoy!

 

Crostini

  1. Preheat oven to 375º.
  2. Drizzle bread slices with oil, then salt and pepper.
  3. Bake on foil-lined baking sheet for 6-8 minutes or until slices are lightly crispy on the outside but still have a good chew.
