White Chicken Chili Recipe

This White Chicken Chili reminds us of when we first started cooking together over 10 years ago. Pinterest had just really taken off, and it was winter time, and there were 500 million pins of “one-pot crockpot super easy yummy the best ultimate perfect weeknight” White Chicken Chili. And every single one of them used canned green chiles. Don’t use canned green chiles. We get it—they’re easy. But so is your mom. And you don’t see us writing “8 oz can of Darlene” in every comfort food recipe.

Ingredients

  • 3 poblanos, halved & deseeded
  • 3 tomatillos, husked & halved
  • 2 Tbsp olive oil, divided
  • Salt
  • Pepper
  • 1 onion, diced
  • 1/2 head garlic, minced
  • (2) 15 oz cans white corn
  • (2) 15 oz cans cannellini beans
  • 1 Tbsp cumin
  • 1 Tbsp dried oregano
  • 1 tsp smoked paprika
  • 1/2 tsp cayenne

  • 6 cups chicken broth
  • 8 oz cream cheese, room temperature
  • 1 rotisserie chicken, shredded
  • 1/2 tsp lime zest
  • Monterey Jack, for garnish
  • Fresh cilantro, for garnish
  • Sliced avocado, for garnish
  • Lime wedges, for garnish

COOKING INSTRUCTIONS:
White Chicken Chili

  1. Preheat grill to medium-high heat.
  2. In a medium bowl, toss poblanos and tomatillos with 1 Tbsp oil and salt and pepper to taste. Grill till poblanos and tomatillos are tender and slightly charred. Remove from heat and let cool until able to be handled. Dice both and set aside.
  3. In a large pot over medium-high heat, add 1 Tbsp oil. Sauté onion until tender. Sauté garlic until fragrant, about 1 minute. Stir in poblanos, tomatillos, corn, beans, cumin, oregano, paprika, cayenne, and salt and pepper to taste. Stir in chicken broth. Bring to boil then reduce to simmer. Simmer for 15-20 mins.
  4. Stir in cream cheese and chicken until well-integrated. Simmer for 5-10 mins more.
  5. Stir in lime zest. Serve immediately garnished with sliced avocado, Monterey Jack, cilantro, and lime wedge. Enjoy!
