Ingredients
- 2 cups sugar
- 1 cup canola oil
- 3 eggs
- 1 Tbsp vanilla
- 2 cups shredded & drained zucchini
- 2 cups flour
- 1 tsp baking soda
- 2 Tbsp cinnamon (or to taste)
- 1 tsp salt
- 1/4 tsp baking powder
- 1 cup chopped walnuts
COOKING INSTRUCTIONS:
Zucchini Nut Bread
- Preheat oven to 350º.
- Mix sugar, oil, eggs, and vanilla. Then add zucchini (make sure to leave a little bit of water in the zucchini—this will keep your bread moist). Set aside.
- Combine flour, baking soda, cinnamon, salt, and baking powder. Then add to mixture of sugar, oil, eggs, and vanilla. Combine thoroughly. Fold in walnuts.
- Grease and flour two small bread pans. Pour mixture into pans. Bake for 1 hour or until center is done.
