Ingredients

  • 2 cups sugar
  • 1 cup canola oil
  • 3 eggs
  • 1 Tbsp vanilla
  • 2 cups shredded & drained zucchini
  • 2 cups flour

  • 1 tsp baking soda
  • 2 Tbsp cinnamon (or to taste)
  • 1 tsp salt
  • 1/4 tsp baking powder
  • 1 cup chopped walnuts

COOKING INSTRUCTIONS:
Zucchini Nut Bread

  1. Preheat oven to 350º.
  2. Mix sugar, oil, eggs, and vanilla. Then add zucchini (make sure to leave a little bit of water in the zucchini—this will keep your bread moist). Set aside.
  3. Combine flour, baking soda, cinnamon, salt, and baking powder. Then add to mixture of sugar, oil, eggs, and vanilla. Combine thoroughly. Fold in walnuts.
  4. Grease and flour two small bread pans. Pour mixture into pans. Bake for 1 hour or until center is done.
