This Aviation Mocktail is just as light, bright, and delicate as the real thing. Not only is it booze-free, but it also involves a nice little chemistry experiment when the lemon juice turns the blue tea purple!

Ingredients
Butterfly Pea Flower Tea
- 1 cup boiling water
- 1 tsp dried butterfly pea flowers
Aviation Mocktail
- 2 oz butterfly pea flower tea
- 2 oz water
- 1/2 lemon, juiced
- 6-8 dashes cherry bitters
- 2 dashes orange bitters
- 1/2 oz simple syrup
- Lemon peel, for garnish
- Maraschino cherries, for garnish
Instructions
Butterfly Pea Flower Tea
- Let flowers steep in water for 1-2 minutes. Strain out flowers. Let cool to at least room temperature before use.
Aviation Mocktail
- Combine all ingredients in a shaker or stirring glass. Shake/stir until well-chilled. Strain into coupe glass. Garnish with lemon peel and cherries and serve.
