This Aviation Mocktail is just as light, bright, and delicate as the real thing. Not only is it booze-free, but it also involves a nice little chemistry experiment when the lemon juice turns the blue tea purple!

Ingredients

Butterfly Pea Flower Tea

  • 1 cup boiling water
  • 1 tsp dried butterfly pea flowers

 

Aviation Mocktail

  • 2 oz butterfly pea flower tea
  • 2 oz water
  • 1/2 lemon, juiced
  • 6-8 dashes cherry bitters
  • 2 dashes orange bitters
  • 1/2 oz simple syrup
  • Lemon peel, for garnish
  • Maraschino cherries, for garnish

Instructions

Butterfly Pea Flower Tea

  1. Let flowers steep in water for 1-2 minutes. Strain out flowers. Let cool to at least room temperature before use.

 

Aviation Mocktail

  1. Combine all ingredients in a shaker or stirring glass. Shake/stir until well-chilled. Strain into coupe glass. Garnish with lemon peel and cherries and serve.
