This Baba Ganoush recipe is easy to make, healthy, and packs LOTS of flavor. Grilled eggplant with nutty and creamy tahini, brightened with lemon and spiced up with paprika and cumin and garlic. Who said healthy eating had to taste like dirt?

Ingredients
- 3 eggplants
- 1 lemon, juiced
- 1/4 cup tahini
- 1 head roasted garlic
- 1 tsp smoked paprika
- 1 tsp cumin
- 2-3 Tbsp olive oil, plus more for garnish
- 1-2 Tbsp fresh parsley, plus more for garnish
- Pine nuts, for garnish
COOKING INSTRUCTIONS:
Baba Ganoush
- Grill eggplants over medium heat for 30-40 minutes, or until well-charred and deflated. Remove from grill.
- In a large bowl, scoop out all flesh from eggplants. Be sure to remove any stray pieces of skin. Transfer eggplant to cheesecloth or linen towel and wrap tightly. Squeeze out all moisture from eggplant until the cloth is no longer dripping.
- Transfer eggplant back to original bowl (be sure bowl has been emptied of any liquid or skin fragments). Combine all ingredients except oil and parsley. While stirring, drizzle in oil. Then mix in parsley. Serve garnished with more olive oil, parsley, and pine nuts along with carrot, celery, and cucumber. Enjoy!
