These Breakfast Pigs in a Blanket taste like your childhood knocked on your door at 10PM last night and said “Brah. Put on some pants. We’re hitting the town.” Then the night disappeared and you woke up sleeping on your living room floor cuddled up with your toothbrush and a ukulele. And your childhood is nowhere to be found except in the fact that there is only one food that could bring you back to life. You’ve never actually spoken to a pig, but you’ve always imagined they like blankets. Especially to be wrapped in them. And probably they’ve made friends with a quail or two at some point. So now you’re in the kitchen drinking bourbon maple syrup straight from the bottle and the smell of browning sausage and fresh pancake batter is everywhere.

Ingredients
Sausage Patties
- 1 lb Jimmy Dean Premium Pork Sausage
Buttermilk Pancake Batter
- 1 egg
- 1 1/4 cups buttermilk
- 1 tsp vanilla extract
- 2 Tbsp canola oil
- 1 cup AP flour
- 1/4 cup sugar
- 2 tsp baking powder
- 1/2 tsp baking soda
- 1/2 tsp salt

- 8 Sausage Patties, cooked
- Buttermilk Pancake Batter
- 8 sunny-side-up quail eggs
- Crown Maple Bourbon Barrel Aged Maple Syrup
COOKING INSTRUCTIONS:

Sausage Patties
- Form 8 patties that are about 3” in diameter and 3/4” thick.
- Heat pan to medium heat and cook patties in batches until completely cooked through (165°F internal temp). About 3-4 minutes per side. Set aside.
Buttermilk Pancake Batter
- In a small mixing bowl, whisk egg. Whisk in buttermilk, oil and vanilla. Set aside.
- In a large mixing bowl, combine flour, sugar, baking powder, baking soda, and salt.
- Add your wet mixture to your dry ingredients and use a whisk to blend until combined. A few remaining lumps are ok. Set aside.
Breakfast Pigs in a Blanket
- Heat skillet to medium heat. Working one at a time, dredge a sausage patty in the pancake batter, then cook on both sides until golden brown. About 2-3 minutes per side. If batter on edges is still wet, briefly sear to cook.
- Remove from skillet and serve each immediately topped with a sunny side up quail egg and drizzled with maple syrup.
