Chai Cookies Recipe

These Chai Cookies take on the whole baking spice rack in the most delicious way. Six spices along with vanilla and a deep molasses note bring everything together so that one flavor isn’t too strong, all of it lingering on your tastebuds just like a sip of chai spiced tea.

Ingredients

  • 3/4 cup unsalted butter softened
  • 1 cup packed brown sugar
  • 1 egg
  • 1/4 cup molasses
  • 1 tsp vanilla extract
  • 2 1/2 cups all-purpose flour
  • 2 tsp baking soda
  • 1/2 tsp cinnamon

  • 1/2 tsp ground ginger
  • 1/2 tsp ground nutmeg
  • 1/2 tsp ground cardamom
  • 1/2 tsp salt
  • 1/8 tsp ground cloves
  • 1/8 tsp ground allspice
  • Powdered sugar for rolling

COOKING INSTRUCTIONS:
Chai Cookies

  1. Using a hand mixer combine butter and brown sugar until smooth. Add egg, molasses, and vanilla. Mix together until well-combined.
  2. In a separate bowl, mix together flour, baking soda, and spices until combined.
  3. Add dry ingredients to wet ingredients. Mix until well-combined.
  4. Cover dough with plastic wrap and chill in fridge for at least 2 hours.
  5. Preheat oven to 375º.
  6. Remove dough from fridge and form into 1″ balls. Roll each ball in powdered sugar until fully coated—the thicker the layer the better, because the powdered sugar will remain more visible after baking. Place balls on parchment-lined baking sheet and bake at 375° for 10 minutes or until cookies have cracked but still look slightly under-baked.
  7. Remove from oven and let cookies cool for at least 10 minutes. Enjoy.
