Chicken and Jalapeño Biscuit Bites Recipe

These Chicken & Jalapeño Biscuit Bites don’t need a party to party cuz they ARE the party. Using Mt. Olive’s Sliced Jalapeños tempers the heat a bit and makes them even more of a crowd-pleaser!

Ingredients

Jalapeño Biscuits

  • 1/2 cup salted butter + more for brushing biscuits
  • 1.5 cups AP flour + more for dusting
  • 1.75 tsp baking powder
  • 1/2 tsp salt
  • 2 tsp garlic powder
  • 3 Tbsp Mt. Olive Jalapeno Slices, finely minced + more whole slices for topping biscuits
  • 1/2 cup buttermilk
  • 2 tsp honey
  • Fried chicken, cooked (frozen or fresh)
  • Honey butter, for garnish

 

Honey Butter

  • 1/2 stick salted butter, room temperature
  • 1/4 cup honey, or to taste

COOKING INSTRUCTIONS:
Chicken and Jalapeño Biscuit Bites

Jalapeño Biscuits

  1. Preheat oven to 400ºF.
  2. Cut butter into 1/2″ cubes and place in the freezer for 10-15 mins.
  3. Add flour, baking powder, salt, and garlic powder to a food processor then pulse till well-integrated. Add chilled butter and pulse until large crumbs form.
  4. Transfer mixture to a large bowl. Stir in 3 Tbsp minced jalapeõs til combined. Drizzle buttermilk and honey in while tossing with a fork to combine. Lightly knead until a shaggy dough forms.
  5. On a floured surface, form dough into a 1″ thick square. Cut dough into 4 equal pieces then stack pieces into layers. Press the layers down then roll out into a 1″ thick rectangle and cut into about 2” x 2” squares. Transfer biscuits to parchment lined baking sheet and place in freezer for about 15 minutes.
  6. Remove biscuits from the freezer and brush with melted butter, then top with 2 or 3 jalapeño slices. Bake for 12-15 minutes, or until golden brown. Remove from oven and let rest 5 minutes. Serve topped with fried chicken bites and honey butter.

 

Honey Butter

  1. In a medium bowl, whip butter and honey with electric hand mixer for 2-3 mins or until fluffy.
