This Chipotle Sweet Potato Salad is for when regular ole potato salad just won’t do. You take one bite and it’s bland and suddenly you’re over by the holiday spread hulking up like Hulk Hogan.

Ingredients
Roasted Sweet Potatoes
- 3 medium sweet potatoes, sliced into 1/2”
- 1 Tbsp garlic powder
- 1 tsp oregano
- 1/2 tsp chipotle powder
- Salt
- Pepper
- 1-2 Tbsp cornstarch
- 1 Tbsp olive oil
Smoky Chipotle Aioli
- 1/2 cup crema
- 1/2 cup mayo
- 2 large chipotle pepper in adobo, diced
- 1 Tbsp adobo sauce
- 1 tsp fresh oregano
- 1 lemon, juiced
- 1 tsp garlic powder
- Salt to taste
Chipotle Sweet Potato Salad
- Roasted sweet potato cubes
- 1/2 cup onion, finely diced
- 1/2 red bell pepper, diced
- 1/4 cup picked jalapeños
- 1 Tbsp fresh cilantro, chopped
- Smokey Chipotle Aioli
- Salt to taste
- Smoked paprika, for garnish
COOKING INSTRUCTIONS:
Chipotle Sweet Potato Salad
Roasted Sweet Potatoes
- Preheat oven to 425ºF.
- Slice potatoes into 3/4” cubes. In a large bowl, season with chipotle powder, garlic powder, oregano, salt, and pepper. Toss in cornstarch until evenly coated. Toss in oil until starch is no longer visible.
- Arrange potatoes in a single layer on a foil-lined baking sheet. Bake for 25-30 minutes or until browned to taste. Be sure to turn potatoes halfway through. Remove from heat and set aside.
Smoky Chipotle Aioli
- Combine all ingredients in a medium bowl. Whisk together until well-combined. Chill in fridge until ready for use.
Chipotle Sweet Potato Salad
- Add all ingredients except salt and smoked paprika into a large bowl. Toss until evenly coated with aioli. Salt to taste, if necessary. Garnish with smoked paprika and serve immediately.
