Chorizo and Tequila Steamed Clams Recipe

Bring date night home with these Chorizo and Tequila Steamed Mussels! No being trapped on the wait list for a table, and you can knock out the entire dish in a half hour on your Char-Broil VersaTILE 5-in-1 Cooking Station. Just build your chorizo and tequila sauce in a wok, then steam your clams while you toast some bread slices on the griddle. Now put on some accordion music and let the night take you where it takes you.

Ingredients
- 4-5 oz Mexican chorizo
- 1 shallot, minced
- 1/2 head garlic, minced
- 1/2 cup blanco tequila
- 1 cup chicken broth
- 2 medium tomatoes, diced
- 1/2 tsp smoked paprika
- 1/4 tsp cumin
- 50 little neck clams, rinsed thoroughly
- 1/4 cup freshly chopped oregano
- 1 Italian bread loaf, sliced
- Olive oil, to taste
COOKING INSTRUCTIONS:
Chorizo and Tequila Steamed Clams
- Preheat wok over medium-high heat setting for open burner on VersaTILE grill. Add chorizo and cook through completely while stirring frequently, about 4-5 mins.
- Add shallots and sauté for ~2 mins, then add garlic and sauté for another ~1 min.
- Add tequila and bring to simmer for 3-4 mins, or until alcohol is completely cooked out (you can tell by the smell of alcohol being gone).
- Add in chicken broth, tomatoes, smoked paprika, and cumin. Bring to simmer, then add clams and bring back to simmer. Make sure to remove and throw away any clams that are already open or cracked. Cover wok with lid, stirring occasionally and removing each clam immediately after it opens and setting it aside in a large bowl.
- Once all clams are removed from pot, stir in oregano. Allow to simmer for a minute or two to integrate, then remove from heat.
- While clams are simmering: Preheat griddle side of VersaTILE to medium heat. Drizzle one side of each bread slice with olive oil to taste. Toast bread slices for ~2 mins per side, or until desired brownness. Remove from griddle and set aside.
- To serve Chorizo and Tequila Steamed Clams: Turn off burner on VersaTILE. Return clams to wok and toss in sauce. Transfer clams to serving dish. Enjoy with toasted bread slices.
