Ingredients
Whipped Feta
- 8 oz block feta
- 1/2 cup Greek yogurt
- 1 lemon, zested

- 4 strips thick-cut bacon
- 1 red bell pepper, finely diced
- 2 shallots, minced
- 3 garlic cloves, minced
- 1/2 cup white wine
- 1/2 stick butter
- 2 Tbsp fresh dill, finely chopped
- 2 Tbsp fresh oregano, finely chopped
- 2 Tbsp fresh parsley, finely chopped
- 1/2 Tbsp crushed red pepper
- 1/2 cup plain breadcrumbs
- 2 lbs littleneck or middleneck clams

- Add all ingredients to food processor. Process until smooth. Transfer to storable container and chill until ready for use.

- Cook bacon via desired method (oven, stovetop, griddle, etc). Be sure to reserve at least 2 Tbsp bacon fat after cooking. Crumble bacon then set the crumbles and reserved fat aside.
- On Charbroil grill’s sideburner, heat reserved bacon fat in cast iron pan. Add bell pepper and shallot and cook for 3-5 minutes, or until tender. Add garlic and cook for about 1 minute, or until fragrant.
- Stir in wine and bring to simmer. Continue simmering to reduce by half.
- Turn heat to low, then stir in butter until melted. Turn off heat, then stir in dill, oregano, parsley, breadcrumbs, and crushed red pepper. Set aside.
- Preheat Charbroil grill to medium-high heat.
- Place clams in large foil pan, then fill pan with ~1/4″ deep water, then cover pan with lid or foil. Place pan on grill then close grill lid. Steam clams for ~10 minutes, or until clams have all opened up (be sure to remove each clam immediately after it opens). Once all clams have opened and been removed from pan, discard water in foil pan then dry pan with paper towel then set aside.
- Remove the top half of each clam shell then discard. Disconnect clam meat from bottom shell, then place bottom shell with clam meat in it back into foil pan. Top each bottom shell with a heaping mound of breadcrumb mixture (approx. 1 tsp).
- Place foil pan uncovered back on grill then close grill lid. Bake for 6-8 mins, or until breadcrumbs have become golden brown. Remove, then top with Whipped Feta and serve immediately with lemon wedges. Enjoy!
