This Hangry Apple Grilled Cheese is more savory than sweet with the deep flavors of caramelized onion, garlic thyme butter, smoked gouda, and sharp cheddar—all balanced by tart honeycrisp apple and a drizzle of honey.

Ingredients

Garlic & Thyme Butter

  • 1 stick salted butter, room temp
  • 2 garlic cloves, minced
  • 2 Tbsp finely chopped fresh thyme
  • 1/4 tsp pepper

  • 6 slices of sourdough bread
  • Garlic & Thyme Butter
  • 1.5 cups freshly shredded sharp cheddar + more if needed
  • 1.5 cups freshly shredded smoked gouda + more if needed
  • 3 medium honeycrisp apples, cored & sliced
  • 6 Tbsp salted butter, divided
  • 2 large onions, slivered
  • 1/4 cup balsamic vinegar
  • Honey, for garnish

COOKING INSTRUCTIONS:

Garlic & Thyme Butter

  1. Combine all ingredients in a small bowl. Using a hand mixer, mix until well-combined. Set aside at room temperature.

  1. Preheat Char-Broil Folding Cart Gas Griddle to medium heat. While cooking, be sure to monitor heat level in case it needs to be decreased so as not to cook too quickly.
  2. In a small bowl, mix together both cheeses until evenly distributed. Chill in fridge until ready for use.
  3. Melt 3 Tbsp butter to grease entire griddle. Add onion and toss in melted butter. Continue to stir every 4-5 mins and cook until tender and caramelized. When onions are a few mins from being done, stir in balsamic vinegar until onions are evenly coated. Continue cooking until onions and vinegar are fully caramelized. Remove from grill and set aside.
  4. To build sandwich: slather the inside of each bread slice with Garlic & Thyme butter. Then top the heel bread slice with some cheese blend, 1/3 of caramelized onions, 6 apple slices, more cheese blend, then the crown bread slice. Repeat with remaining ingredients to make 3 total sandwiches.
  5. Melt the remaining 3 Tbsp butter on griddle. Brown sandwiches on both sides, about ~2 mins per side, or until golden brown. Remove from griddle and garnish with a drizzle of honey before serving.
