Our Hangry Croque Madame said we see you whining about calories and raise you another 1000. We hear you watching this video and snarking “How about a heart attack for dinner?” and then we kick that bowl of overnight oats out your hand. Cuz if you’re gonna indulge, do it right. If you’re gonna make a sandwich called Lady Crunchy Bites, you better not disappoint the Lady. Also, wow, French people. You’re really gonna name a sandwich Lady Crunchy Bites lol?

Ingredients

Bechamel Sauce

  • 2 Tbsp butter
  • 2 Tbsp flour
  • 1 1/4 cup whole milk
  • 1/2 Tbsp Dijon mustard
  • 1/2 tsp garlic powder
  • 1/2 cup gruyere, freshly grated
  • Salt
  • Pepper

 

Croque Madame

  • 1 stick + 3 Tbsp butter, divided
  • 2 onions, slivered
  • 8 slices sourdough bread
  • 12 to 16 slices Kentucky Legend Brown Sugar Ham
  • 2 cups shredded mozzarella and provolone cheese blend, divided
  • 4 large eggs

COOKING INSTRUCTIONS:
Hangry Croque Madame

Bechamel Sauce

1. In a small pan, melt butter over medium heat. Whisk in flour and cook, stirring constantly, about 2 to 3 minutes. Do not let it brown.
2. Whisk in milk, mustard, and garlic powder. Continue whisking occasionally until sauce thickens considerably. 10-12 minutes.
3. Remove from heat and whisk in gruyere. Salt and pepper to taste. Return to burner at lowest heat setting and stir occasionally until ready to serve.

 

Croque Madame

1. In a large pan, melt 2 Tbsp butter over medium heat. Cook onions until soft and heavily caramelized. Remove from heat and set aside.
2. Arrange 4 slices of bread on a flat surface. Top each with 3 to 4 slices of ham. Top with onions to taste. Top with 1/4 cup of cheese blend on each sandwich. Top with a little béchamel. Top each with another slice of bread.
3. Preheat broiler.
4. In a large cast iron skillet, add half stick of butter. Add 2 sandwiches and brown on one side. Flip and brown on the other side. Transfer to a foil-lined baking sheet. Repeat with other 2 sandwiches.
5. Top sandwiches with 1/4 cup of cheese blend each. Broil for 1-2 minutes or until cheese is melted and slightly browned. Remove from oven.
6. In cast iron skillet, melt 1 Tbsp butter over medium heat. Fry eggs sunny side up. Remove from heat and set aside.
7. Top each sandwich with more béchamel and one egg. Serve immediately.
