Ingredients

Jalapeño Cheddar Sauce

  • 1 Tbsp butter
  • 1/2 onion, finely diced
  • 4 cloves garlic, minced
  • 2-3 jalapeños, finely diced
  • 1 Tbsp flour
  • Salt
  • Pepper
  • 1 cup milk
  • 1/2 cup heavy cream
  • 1/2 cup white cheddar, shredded
  • 1/2 cup taco blend cheese, shredded

 

Potatoes

  • 2 large Russet potatoes, sliced 1/8” thick
  • Olive oil, to taste
  • 1/2 head garlic
  • 1/2 cup fresh herbs (parsley, oregano, chives)
  • Salt
  • Pepper

COOKING INSTRUCTIONS:
Roasted Potatoes with Jalapeño Cheese Sauce

Jalapeño Cheddar Sauce

  1. In a pan over medium-high heat, melt butter. Add onion and jalapeño and cook until softened. Add garlic and cook until fragrant. Whisk in flour until well-combined and cook for 1-2 minutes.
  2. Working slowly, whisk in milk and heavy cream. Bring to a simmer and allow to thicken. Whisk in cheese and remove from heat. Continue whisking until desired consistency. Serve immediately over sliced potatoes and cubed ham (optional).

 

Potatoes

  1. Preheat oven to 400º.
  2. In large bowl, toss potatoes, oil, garlic, herbs, and salt and pepper to taste.
  3. Line a baking sheet with foil. Spread out potato slices in a single layer. Roast for 15-20 minutes, or until they begin to turn golden brown and crisp slightly. Remove from oven.
