This Sausage, Squash & Sprouts Bowl is a reminder that not all winter comfort food has to be drenched in cheese and cream sauce then deep-fried (that’s just our other recipes lol).

Ingredients
Brussels Sprouts
- 2 lbs Brussels sprouts, shaved or thinly sliced
- 2 Tbsp butter
- 1/2 onion, diced
- 1/2 head garlic, minced
- Salt, to taste
- Pepper, to taste
Butternut Squash & Italian Sausage
- 1 medium butternut squash
- 4 Tbsp butter
- 5 sage leaves, finely chopped
- Salt, to taste
- Pepper, to taste
- ~19 oz of Italian sausages
Sausage, Squash & Sprouts Bowl
- 1 cup farro
- 1/2 cup tahini
- 2 Tbsp sriracha
- 2 Tbsp soy sauce
- 2 Tbsp water
- 1 Tbsp lemon juice
- 1 Tbsp olive oil
- Brussels Sprouts
- Butternut Squash
- Italian Sausage
- Freshly crumbled feta, for garnish
COOKING INSTRUCTIONS:

Brussels Sprouts
- Preheat griddle to medium heat.
- Add oil and immediately toss shaved Brussels, onion, and garlic till evenly coated, then season with salt, and pepper. Sauté while stirring occasionally until sprouts are soft and lightly browned. Remove from grill and set aside.
Butternut Squash & Italian Sausage
- Peel squash and cube it into 1/2” cubes. Set aside.
- Melt 2 Tbsp butter on griddle. Add butternut squash cubes and sage then toss in butter until evenly coated. Cook for 5 minutes without stirring then toss squash so it browns on more than one side. Cook for another 5 minutes or until the squash becomes tender and slightly browned. Salt and pepper to taste. Remove from griddle and set aside.
- While butternut squash is cooking, cook sausages on griddle until about 80% cooked through—you want them firm enough to be able to be sliced. Remove from griddle and let rest 5-10 mins. Slice in 1/4” thick pieces, then return to griddle and quickly brown both sides of each slice so that they’re cooked through. Remove from griddle and set aside.
Sausage, Squash & Sprouts Bowl
- While grilled components are cooking, cook farro according to package directions. Set aside.
- In a small bowl, mix together tahini, sriracha, soy sauce, water, lemon juice, and olive oil until well-combined. Set aside.
- To build each Sausage, Squash & Sprouts Bowl: In an individual serving bowl, add Brussels Sprouts, Butternut Squash, and Italian Sausage. Top with cooked farro, spicy tahini sauce, then crumbled feta. Repeat with remaining ingredients. Enjoy!
