Ingredients

Chicken Prep

  • 2 chicken breasts, cubed
  • 2 Tbsp olive oil
  • Half a head of garlic, minced
  • Zest of 1 lemon
  • 1 Tbsp lemon juice
  • 1 tsp salt
  • 1 tsp black pepper
  • 1 tsp dried oregano
  • 1 tsp ground cumin
  • 1/2 tsp coriander
  • 1/2 tsp paprika

 

Spicy Garlic Sauce

  • 1/2 cup mayonnaise
  • 1 cup plain Greek yogurt
  • 3 cloves garlic, minced
  • 2 to 3 Tbsp Sriracha (or to taste)
  • 1 tsp salt
  • 1/2 tsp black pepper
  • Pinch of cayenne pepper
  • 1/2 Tbsp lemon juice

Pita Prep

  • 1/4 cup olive oil
  • Garlic powder, to taste
  • Black pepper, to taste
  • Sea salt flakes, to taste

 

Pita Build

  • 4 Greek-style pitas or Naan
  • Arugula
  • 1 tomato, thinly sliced
  • 1 cucumber, thinly sliced
  • Chicken

COOKING INSTRUCTIONS:
Spicy Lemon Garlic Chicken Pitas

  1. In a medium-sized bowl, toss chicken with olive oil, then add garlic, lemon zest, lemon juice, salt, pepper, oregano, cumin, coriander, and paprika.
  2. Skewer the chicken and marinate it for at least 20 minutes.
  3. Prep garlic sauce by combining all the ingredients in a small bowl, then whisking together until smooth. Set aside.
  4. Preheat grill to high heat. Prep the pitas by combining olive oil, garlic powder, and black pepper to taste in a small bowl. Brush the mixture on both sides of pita. Sprinkle sea salt to taste on top side of pita only.
  5. Cook chicken skewers for about 6-8 minutes, turning every 2 minutes or until they get slightly charred on all sides (and are fully cooked). Remove from grill. Let rest. Turn grill heat to medium heat.
  6. Grill the pitas so that each side has grill marks but the pita remains easily bendable. About 2 minutes per side, depending on grill heat level.
  7. To build the pita, lay pita flat on plate, then spoon some sauce down the middle. Add arugula, then tomatoes, then cucumbers, then 8 or so pieces of chicken. Top with more sauce.
