These Tostones with Spicy Avocado Ranch Dip are a transport dish for us. After just one dip and bite, suddenly we’re not in our kitchen arguing about what that one bug with that thing on it is called—we’re now seaside in the Caribbean each with a 64 oz mojito in our hand, arguing about what that one bug with that thing on it is called.  And though neither of us really knows what we’re talking about, but a few things are certain. Tostones and Tajin are a match made in heaven. Tostones and spicy avocado ranch are a match made in heaven. And the two of us arguing over the name of a bug are, in fact, a match made in heaven.

Ingredients

Spicy Avocado Ranch Dipping Sauce

  • 1/2 cup low-fat buttermilk
  • 4 Tbsp sour cream
  • 3 Tbsp mayonnaise
  • 1/2 large avocado
  • 1 Tbsp cilantro
  • 1/2 lime, juiced
  • 2 Tbsp pickled jalapeños, diced
  • 1/4 tsp chipotle powder
  • 1 garlic clove, minced or pressed
  • Salt, to taste
  • Pepper, to taste

 

Tostones

  • 2 green plantains
  • Canola or vegetable oil for frying
  • 2 cups water
  • 1 lime, juiced
  • Tajin, for seasoning

Spicy Avocado Ranch Dipping Sauce

  1. In a small food processor, combine all ingredients and blend until smooth. Chill until ready to serve.

 

Tostones

  1. In a pot, heat oil to 325ºF.
  2. Peel and cut plantains into pieces, about 1″ thick.
  3. In a large bowl, combine water and lime juice. Set aside.
  4. Fry plantains until soft and golden, about 1 to 1 1/2 minutes per side. Transfer to a paper towel-lined plate to drain.
  5. Using a glass or plate (we used a mason jar), smash them just enough that they flatten out and are about half their original size., but don’t make them too thin or they’ll fall apart
  6. Dip flattened plantains in lime water. Let sit for about 10 seconds, then remove and pat dry with paper towel. Repeat with remaining plantains.
  7. Reheat oil to between 325º-350ºF. Add flattened plantains in batches and fry till crisp, about 1 minute per side. Transfer to a paper towel-lined plate to drain.
  8. Sprinkle with Tajin seasoning. Serve with Spicy Avocado Ranch Dipping Sauce.
