Ingredients

White Clam Sauce

  • 1 tsp olive oil
  • 1 Tbsp butter
  • 1/2 onion, diced
  • 1 rib of celery, diced
  • 1 head garlic, minced
  • Salt and pepper to taste
  • 1 cup white wine
  • 1 tsp clam juice
  • 1 cup heavy cream
  • (4) 6.5 oz cans chopped clams
  • (1) 10 oz can whole baby clams
  • 1/4 cup Parmesan, freshly grated
  • Crushed red pepper to taste
  • 1/4 cup fresh parsley, chopped

  • Pizza dough
  • White clam sauce
  • Shredded Mozzarella
  • Chili crisp

COOKING INSTRUCTIONS:
White Clam Pizza with Chili Crisp

White Clam Sauce

  1. In a pan over medium heat, combine oil and butter. Add onion and celery and sauté onions and celery until tender. Add garlic and sauté until fragrant. Salt and pepper to taste.
  2. Add wine and clam juice and reduce by half. Add cream and clams and simmer till desired thickness. Stir in parmesan, crushed red pepper, and parsley. Remove from heat and let cool for a minute or two then use for pizza immediately.

 

Oven Instructions for White Clam Pizza with Chili Crisp

  1. Preheat to 400º. Par-bake dough for 8 minutes. Remove from heat and cover dough with sauce, mozzarella, then spread chili crisp to taste.
  2. Return to oven and bake for 20-25 minutes, or until cheese is bubbling and crust is set.
  3. Remove from oven and enjoy!

 

Ceramic Grill Instructions for White Clam Pizza with Chili Crisp

  1. Preheat grill with pizza stone to 750-800º.
  2. Cover uncooked dough with sauce, mozzarella, then spread chili crisp to taste.
  3. Place already topped pizza onto pizza stone and cook for 45-second increments, rotating pizza each time. Pizza should take bout 1 1/2 – 2 minutes until done with cheese bubbling and crust set.
  4. Remove from grill and enjoy!
