Ingredients
Asian Cucumber Salsa
- 5 mini cucumbers, diced
- 1/4 tsp salt
- 2 cloves garlic, minced
- 1 tsp apple cider vinegar
- 1 Tbsp honey
- 1 tsp chili powder
- 1 tsp chili oil
- 1 tsp soy sauce
- 1 tsp ginger paste
- 1/2 tsp sesame oil
- 1/2 Tbsp Sesame seeds
Sautéed Shrimp
- 1 lb jumbo shrimp, peeled and deveined
- 1 tsp garlic powder
- 1/2 tsp onion powder
- 1/2 tsp chili powder
- 1/4 tsp ginger powder
- Salt, to taste
- Pepper, to taste
- 1 Tbsp olive oil
Honey-Glazed Pineapple
- 1/2 pineapple, chunked
- 1/2 tsp chili powder
- 1/4 tsp ginger powder
- 1 Tbsp olive oil
- 1 Tbsp honey
Sweet Chili Sauce
- 1/4 cup mayo
- 1/8 cup chili sauce
- 2 Tbsp Sriracha

- Flour tortillas (fajita-sized), lightly pan-browned
- Sautéed Shrimp
- Honey-Glazed Pineapple
- Asian Cucumber Salsa
- Sweet Chili Sauce
COOKING INSTRUCTIONS:

Asian Cucumber Salsa
- In a medium bowl, add all ingredients and toss until well-combined. Chill until ready for use.
Sautéed Shrimp
- In a large bowl, add all ingredients and toss until well-combined.
- In a cast iron skillet over medium heat, cook shrimp on both sides until cooked through. Remove from heat and set aside.
Honey-Glazed Pineapple
- In a medium bowl, add all ingredients and toss until well-combined.
- In a cast iron skillet over medium heat, cook pineapple on all sides until lightly golden brown. Remove from heat and set aside.
Sweet Chili Sauce
- In a small bowl, mix mayo, chili sauce, and Sriracha until well combined. Chill until ready for use.
Pineapple Shrimp Tacos Build
- Build each taco by layering shrimp and pineapple in bottom layer, then topping with salsa, then sweet chili sauce. Serve immediately.
