Ingredients

Asian Cucumber Salsa

  • 5 mini cucumbers, diced
  • 1/4 tsp salt
  • 2 cloves garlic, minced
  • 1 tsp apple cider vinegar
  • 1 Tbsp honey
  • 1 tsp chili powder
  • 1 tsp chili oil
  • 1 tsp soy sauce
  • 1 tsp ginger paste
  • 1/2 tsp sesame oil
  • 1/2 Tbsp Sesame seeds

 

Sautéed Shrimp

  • 1 lb jumbo shrimp, peeled and deveined
  • 1 tsp garlic powder
  • 1/2 tsp onion powder
  • 1/2 tsp chili powder
  • 1/4 tsp ginger powder
  • Salt, to taste
  • Pepper, to taste
  • 1 Tbsp olive oil

 

Honey-Glazed Pineapple

  • 1/2 pineapple, chunked
  • 1/2 tsp chili powder
  • 1/4 tsp ginger powder
  • 1 Tbsp olive oil
  • 1 Tbsp honey

 

Sweet Chili Sauce

  • 1/4 cup mayo
  • 1/8 cup chili sauce
  • 2 Tbsp Sriracha

  • Flour tortillas (fajita-sized), lightly pan-browned

Asian Cucumber Salsa

  1. In a medium bowl, add all ingredients and toss until well-combined. Chill until ready for use.

 

Sautéed Shrimp

  1. In a large bowl, add all ingredients and toss until well-combined.
  2. In a cast iron skillet over medium heat, cook shrimp on both sides until cooked through. Remove from heat and set aside.

 

Honey-Glazed Pineapple

  1. In a medium bowl, add all ingredients and toss until well-combined.
  2. In a cast iron skillet over medium heat, cook pineapple on all sides until lightly golden brown. Remove from heat and set aside.

 

Sweet Chili Sauce

  1. In a small bowl, mix mayo, chili sauce, and Sriracha until well combined. Chill until ready for use.

  1. Build each taco by layering shrimp and pineapple in bottom layer, then topping with salsa, then sweet chili sauce. Serve immediately.
