And it already gets up at 4AM to use the bathroom by the light of its smartphone. How long do apple trees take to grow? Ingredients

Fried Chicken Medallions

  • 2 chicken breasts
  • 2 cups buttermilk
  • 2 Tbsp hot sauce
  • 1 Tbsp + 1 tsp salt, divided
  • 1 Tbsp pepper, divided
  • 1 cup flour
  • 1/2 cup cornstarch
  • 1 Tbsp garlic powder
  • 1/2 Tbsp onion powder
  • 1/2 Tbsp smoked paprika
  • 1/2 tsp cayenne pepper
  • Vegetable or canola oil, for frying

 

Fried Goat Cheese

  • (2) 4 oz honey goat cheese logs
  • 1/2 cup flour
  • 2 eggs, beaten
  • 1 cup plain panko breadcrumbs
  • 1 tsp garlic powder
  • Salt, to taste
  • Pepper, to taste
  • Vegetable or canola oil, for frying

 

Apple Slaw

  • 4 small honeycrisp apples, cored & julienned
  • 1 lemon, juiced
  • 2 Tbsp sugar
  • 1 tsp cardamom

 

Waffles

  • 1.75 cups flour
  • 1 Tbsp baking powder
  • 1/4 cup sugar
  • 1/2 tsp salt
  • 2 egg yolks
  • 1.75 cups milk
  • 1/2 cup canola or peanut oil
  • 1/2 tsp vanilla extract
  • 2 egg whites

  • 1/4 cup mayonnaise
  • 1/4 cup dijon mustard
  • 10-12 waffle quarters
  • 5-6 Fried Chicken Medallions
  • Apple Slaw
  • 5-6 Fried Goat Cheese pieces

COOKING INSTRUCTIONS:
Barn and Orchard Waffle Sandwich

Fried Chicken Medallions

  1. Tenderize chicken to 1/2″ thickness. Cut 5-6 large medallions. Set aside.
  2. In a medium bowl, combine buttermilk, hot sauce, 2 tsp salt, and 2 tsp pepper. Whisk until well-integrated. Add chicken and toss to coat completely. Marinate in fridge for at least 4 hours.
  3. Fill dutch oven with ~2” canola oil and heat to 350ºF.
  4. Combine flour, cornstarch, garlic powder, onion powder, smoked paprika, cayenne, 2 tsp salt, and 1 tsp black pepper in a small bowl. Working one chicken medallion at a time, dredge completely with flour mixture then set on parchment-lined baking sheet.
  5. Working in two or three batches, fry chicken medallions for 5-7 minutes, or until golden brown and internal temp is 165ºF. Be sure to maintain an oil temperature of 325º-350º throughout frying process. Remove from oil to drain on paper towel-lined plate. Repeat with remaining chicken.

 

Fried Goat Cheese

  1. Slice each goat cheese log in half. Form halves into patties. Set aside.
  2. In three separate bowls respectively, add flour, eggs, and panko. Season panko with garlic powder, salt, and pepper.
  3. Preheat oil in pot or deep pan to 350º.
  4. Working one at a time, dredge goat cheese patties in flour, then egg, then breadcrumbs. Set aside on plate. Place in freezer for 20-30 minutes, or until firmed up but not frozen.
  5. Working ~4 patties at a time, fry for 30 seconds to a minute, or until golden brown. Be sure to rotate patties so that they’re evenly browned on all sides. Be sure to maintain a temperature range of 325º-350º throughout frying process. Remove from heat and drain on paper towel.

Apple Slaw

  1. Combine all ingredients in a medium bowl. Toss until lemon juice, sugar, and cardamom are evenly coating the apple. Set aside.

 

Waffles

  1. Preheat your waffle maker.
  2. Combine flour, baking powder, sugar, salt in a large mixing bowl.
  3. In a small bowl and using an electric hand mixer, whip together egg yolks, milk, oil, and vanilla. Pour egg mixture into dry ingredients and using a whisk mix until well-combined.
  4. Using an electric hand mixer, whisk egg whites until stiff peaks form. Gently fold egg whites into waffle batter.
  5. Cook waffles according to your waffle maker instructions. The ideal waffle for this sandwich is just a little darker than normal—it provides more texture and flavor. Once cooled, separate waffles into quarters so that you have 10-12 quarters total. Set aside.

Fried Chicken Sandwich

  1. In a small bowl, mix together mayonnaise and dijon. Set aside.
  2. To build a sandwich: Using two waffle quarters as your bun halves, top one side of each with dijonnaise. Top heel with 1 piece of fried chicken, apple slaw to taste, one piece of fried goat cheese, then the other waffle quarter. Repeat with remaining ingredients. Enjoy!
