This Creamy Salsa Verde is THE new self-care craze. You can eat it, drink it, moisturize your face and hair with it, take selfies with a mason jar of it in the middle of a crowded walkway, and even make reaction videos of yourself reacting to a video of yourself reacting to it. It’s creamy. It’s salsa. It’s verde.

Ingredients
- 2 Tbsp olive oil
- 10 tomatillos, husked, cleaned & halved
- 1 large onion, quartered
- 3 jalapeños, stemmed, seeded & halved
- 8 cloves of garlic, divided
- 1 large ripe avocado, peeled & pitted
- 1/2 cup fresh cilantro, tightly packed
- 1 lime, juiced
- 1 tsp salt
- 1/2 cup sour cream
COOKING INSTRUCTIONS:
Creamy Salsa Verde
- To a large pan, add 2 Tbsp olive oil over medium-high heat. Add in tomatillos, onion, jalapenos, and 6 cloves of garlic and sauté for 3-5 minutes, or until vegetables start to caramelize. Add 1/4 cup water and continue to simmer for 20 minutes, or until vegetables are soft.
- Add all cooked vegetables to a blender along with 2 cloves of raw garlic, avocado, cilantro, and lime juice. Blend until smooth but not puréed.
- Pour salsa into a container and chill for at least 2 hours. Remove from refrigerator and, using a spoon, stir sour cream into salsa until fully integrated. Enjoy with tortilla chips or as a condiment!
