Fried Eggplant Pizza Recipe

This Fried Eggplant Pizza recipe is like Eggplant Parm on steroids (and without parm lol). Marinara, mozzarella, kalamata, roasted red peppers, burrata, and chili oil.

Ingredients

  • Pizza dough
  • Homemade marinara sauce
  • Shredded mozzarella
  • Fried eggplant slices
  • Kalamata olives, sliced
  • Roasted red peppers, sliced
  • Fresh basil
  • Fresh mozzarella pearls
  • Burrata cheese
  • Chili oil

Oven Instructions for Fried Eggplant Pizza

  1. Preheat to 400º. Par-bake dough for 8 minutes. Remove from heat and add all toppings except burrata and chili oil.
  2. Return to oven and bake for 20-25 minutes, or until cheese is bubbling and crust is set.
  3. Remove from oven and top with burrata and chili oil to taste.

 

Ceramic Grill Instructions for Fried Eggplant Pizza

  1. Preheat grill with pizza stone to 750-800º.
  2. Place already topped pizza onto pizza stone and cook for 45-second increments, rotating pizza each time. Pizza should take bout 1 1/2 – 2 minutes until done with cheese bubbling and crust set.
  3. Remove from grill and top with burrata and chili oil to taste.
